France à la carte operate throughout France, but we are based in Toulouse and most of our holidays are in the Pyrenees, the Aquitaine, Midi and Languedoc regions as well as the Alps, the Riviera and, of course, Paris.

 

Secrets of Périgord Cuisine


The Périgord, cradle of European pre-history with the famous caves at Lascaux and Cussac, some 1001 chateaux, a gourmet tradition of fine cuisine … all set in a magnificent landscape of wooded valleys and tiny stone-built villages.

A la carte Cuisine has chosen a sumptuous XIX century château as base for a gourmet and culinary discovery of the Périgord. The château houses the Michelin star restaurant ‘Les Délices d’Hortense’


This noble dwelling has been transformed into a luxury 4* hotel situated on the banks of the river Dordogne in its extensive wooded estate. The 22 rooms give either on to the river or the gardens and are of top quality: air-conditioned, satellite TV, very beautiful bathrooms and period furniture. The estate has its own spa centre.

 

Cooking course

Chef Eric Barbe is recognized for his fine cuisine which is mainly inspired by thethe chef quality of the local products. In his kitchen you will learn how to reproduce the ‘périgourdine’ way of cooking foie gras and duck and other regional dishes, incorporating mushrooms and truffles according to the season.

Afternoon: Visit to a goose farm. Tasting.

Tuesday: Breakfast buffet.
Cooking class on the theme ‘the duck’ (confit, magret)
Lunch as you will
Afternoon: Visit to one of the famous Périgord chateau.
Gourmet dinner and overnight at chateau.


Wednesday: Breakfast buffet.
Cooking class on the theme ‘mushrooms and seasonal vegetables’
Lunch as you will
Afternoon: Visit to a Bergerac vineyard. Tasting.
Gourmet dinner and overnight at chateau.


Thursday: Breakfast buffet.
Cooking class on the theme ‘patisserie’

A la carte cuisine, as our name suggests, is a provider of tailor-made tourist products relating to french cuisine: whether for Tour Operators, travel agents, individuals or small groups we will contruct culinary vacations and cooking tours made to your specifications. We look after accommodation, transfer or transport and the classes. Flights or other inward travel into France are your responsibility.
