France à la carte operate throughout France, but we are based in Toulouse and most of our holidays are in the Pyrenees, the Aquitaine, Midi and Languedoc regions as well as the Alps, the Riviera and, of course, Paris.

 

La Balandre - masterclass with top chef in 3* hotel restaurant in Cahors, Lot.

The town of Cahors - a jumble of chaotic old houses piled into a loop on the Lot river - is not only the capital of the Lot département but also the natural market for local produce: strong red wines (le 'vin noir' de Cahors), truffles, walnuts, geese and duck, foie gras ...

the hotel  and restaurant in cahorsOur cooking programme is based on a masterclass with chef Gilles Marre who runs the renowned restaurant, 'le Balandre' in Cahors. Gilles has accepted to spend a whole day with our customers revealing the secrets of his french cuisine.

 

 

your hosts - Laurent and Gilles Marre As the course is located in the hotel which Gilles' family has run for three generations, participants will have ample opportunity to chat informally with him and his team - even to the extent of accompanying him to the early-morning market in Cahors.

 

 

Sunday– arrival in Cahors in the afternoon - Installation in your 3* hotel

- Welcome aperitif - Dine where you like in town

- Overnight in hotel

Monday – 8 o’clock breakfast

- at 9 am you will meet up with chef Gilles Marre who will describe how the culinary session will proceed

- break at 11.30 for a glass of wine and a summary of work so far

- around midday Gilles will explain how to present the dishes before sitting down with you to lunch .

- The session continues with a course on harmonizing the dish with the right sort of wine

- Around 3.30pm the session ends

- Evening free

- Overnight at hotel

Tuesday – breakfast 8.30– 9.30am

- 9.30 – 10.30 visit to the restaurant kitchen in action: introduction to the brigade de cuisine

- 10.30am – depart for visit to a duck-breeding farm at Lafeuille (10 minutes distant)

- 12.30 – back to the restaurant for lunch

- in the afternoon you will visit the Domaine de Pineraie, a vineyard at Puy l’Eveque and then the celebrated Château Lagrezette at Caillac

- Gourmet dinner at the restaurant

- Overnight in hotel

Wednesday – early start accompanying Gilles Marre to the Cahors market

- Breakfast on your return around 9am - 10 am - departure
