the rolling hills of the lower Ariège.
The
lower Ariège valley is at the crossroads of history and culture
in SW France. To the east lies the Aude and a dry mediterranean
climate. To the west, the valley of the Garonne bringing mild wetter
weather from the distant Atlantic.
In the foothills of the Pyrenean range, towns like Pamiers, Foix
and Mirepoix were host to migrants and travellers moving east-west
or, more rarely, north-south over the mountains from Spain.
The result is a culture and cuisine rich in influence and colour.

agents, individuals or small groups we will contruct
culinary vacations and cooking tours made to your specifications.
We look after accommodation, transfer or transport
and the classes. Flights or other inward travel into
France are your responsibility.
